Wow! I was a little apprehensive about cooking with pumpkin for the first time but as we’d made our Halloween lanterns and I hate waste I decided to give some soup a go. I wasn’t sure if I’d like the taste or smell of cooking with pumpkin but surprisingly it came out delicious. The subtle spices aren’t hot, just flavoursome and the pumpkin and parsnip give it such a creamy thick winter-comfort texture.
