I don’t know if they’re a new invention or a traditional treat revived but it seems the world is going crazy for them in all of their pastel-shaded glory. So when I spotted a vegan-friendly version at Planet Organic I had to jump on the band wagon to see what all of this fuss is about!
Proudly boasting raw goodness these vegan friendly, gluten free, wheat free, organic macaroons are made with the perfect mix of desiccated coconut and lemon juice which I can’t decide if they compliment or clash with one another on taste – but boy do they leave me drooling! Being low GI with the use of unrefined coconut sugar these little drops of heaven help to stop blood sugar levels from crashing and their several natural ingredients of extra virgin coconut oil, almonds, vanilla extract, Himalayan pink salt and ground turmeric put everyday heavily processed snacks to shame!
These nibble-sized macaroons are soft, chewy, beautifully dense, zesty, uplifting and creamy with every bite releasing a new burst of flavour that just keeps on giving. Perfect for popping into your desk drawer and toasting the afternoon in with an accompanying cup of green tea; cheers!
